Quinoa Tabouli Salad
1 cup quinoa
1 1/2 cups water
1 cucumber
1 tomato
½ bunch parsley
2 T. lemon juice
3 T. extra virgin olive oil
sea salt to taste
Wash and soak quinoa for 15
minutes (removes bitter outer layer) then add to boiling water with a pinch of
salt
Reduce heat to low and simmer
covered 15-20 minutes
Transfer quinoa to a large
bowl add all ingredients
lemon juice, olive oil, and
salt to your taste serve chilled
